I don't know why MS forces you to use the newest VPC version, but you can take the virtual hard drive from the XP Mode installation and pop it into VPC 2007. The only hassle is getting the VPC network driver installed. It's not impossible, but it is a bit of a pain at first. Good to know for people that have processors without virtualization technology.
