There were some details I had to look up, so a short summary here. Mostly for personal reference :)

FROM: http://android.sc/update-galaxy-s3-i9300-to-official-android-4-3-xxugmk6-jelly-bean-firmware/

Install Odin 3.07

Download latest official stock firmware for samsung galaxy s3 siii i9300 international here: http://terafile.co/7c2af33de576/I9300XXUGMK6_I9300OXAGMK6_OXA.zip

Extract the zip file. 4 new files will appear.

Open Odin, connect your phone (while in download mode) and do the following:

4-Click on “CSC” and select CSC_OXA_I9300OXAGMK6_2168382_REV00_user_low_ship.tar.md5. (4. will factory reset phone)

Then click on “Start” and wait for it to finish.

When finished, Odin will display a “RESET” message and the device will reboot automatically. After it's done, it might freeze on the “Samsung” logo so just disconnect the device and reconnect it, Odin will display the “Pass” message. Re-disconnect your device and reboot it and that’s it.

IF you need to root your phone...

Download: http://download.chainfire.eu/229/CF-Root/CF-Auto-Root/CF-Auto-Root-m0-m0xx-gti9300.zip

Extract the zip file and use Odin with PDA to flash the resulting .md5 file to your phone.
Using this method to root will introduce all kinds of havoc when used on this firmware version!

0. (EDIT: you have Odin & USB drivers...)
1. To root, you need to install CWM recovery (which allows for zip installation). Copy Paste from: http://scforum.info/index.php/topic,8537.msg21991.html#msg21991 *
- Your phone should be in downloading mode. Boot into this by pressing and holding Volume Down + Home Button + Power Key simultaneously.
- Connect your phone to your PC.
- As soon as Odin detects your phone the ID:COM box will turn light blue.
- Click on the PDA tab and select the downloaded Philz Advanced CWM recovery.tar.md5 file (http://d-h.st/aIS)*
- Click Start and the flash process should start showing you a progress bar in the first box above ID:COM.
- The process is quite fast and will finish in a few seconds, as soon as it ends, your phone will restart and you’ve installed the CWM recovery, needed for the root installation process.*

2. Rooting itself: download SuperSu v1.69 file from http://download.chainfire.eu/365/SuperSU/UPDATE-SuperSU-v1.69.zip?retrieve_file=1 .
- Place the downloaded SuperSu.zip file on your phone’s SD Card.
- Boot into Philz Advanced CWM Recovery. To do so, first turn off your device until it gives you the turn off vibration. Now turn on your device by pressing and holding Volume Up + Home Button + Power Key simultaneously.
- Now in Philz Advanced recovery tap “install zip>chose zip from sd card>select SuperSu.zip”and proceed with the installation process.
- The flashing process should take a few seconds to end, reboot your device after and find SuperSu installed in App Drawer.
- Congrats! You’ve successfully installed a custom recovery and rooted your Galaxy S III running on Android 4.3 Jelly Bean.
