taco salad recipe:
Ingredients:
For the salad:
1 pound ground beef or chicken
1 tablespoon oil (if using lean meat)
1 packet taco seasoning
1 head lettuce, shredded
1 cup cherry tomatoes, halved
1 cup corn kernels (canned or frozen, thawed)
1 cup black beans (canned, rinsed and drained)
1/2 cup diced red onion
1/2 cup diced bell peppers (any color)
1/2 cup shredded cheddar cheese
1/2 cup crushed tortilla chips
Optional toppings: sliced avocado, sliced black olives, diced jalapenos
For the dressing:
1/4 cup sour cream
2 tablespoons mayonnaise
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
Salt and pepper to taste
Instructions:
In a large skillet, heat the oil over medium heat. Add the ground beef or chicken and cook until browned and cooked through. If using ground beef, drain any excess grease. Add the taco seasoning and stir to coat the meat. Remove from heat and set aside to cool slightly.
In a large salad bowl, combine the shredded lettuce, cherry tomatoes, corn, black beans, red onion, diced bell peppers, and shredded cheddar cheese.
In a small bowl, whisk together the sour cream, mayonnaise, lime juice, chopped cilantro, salt, and pepper until well combined. This will be the dressing for your taco salad.
Add the slightly cooled cooked meat to the salad bowl and toss everything together to combine.
Pour the dressing over the salad and toss again to coat all the ingredients evenly.
Sprinkle the crushed tortilla chips over the top of the salad.
Serve the taco salad in individual bowls or plates, and if desired, garnish with sliced avocado, sliced black olives, diced jalapenos, or any other toppings of your choice.
