This is one of my favorite Recipes... Really Cheap (definitely a under $20 Meal) and easy to cook.

Cook up 6 pieces of bacon and set to the side... cook on medium/high heat 2-3 boneless chicken breasts (seasoned with salt n pepper or a season all) in the bacon grease for 5 minutes on each side...take it out and cut it up on a cutting board (it will still be semi raw inside) add Onion, Anaheim and Bell Pepper to the pan and throw the 6 pieces of crumbled up bacon back in there...add the chicken pieces back in and add sum more seasoning then cook for another 10 minutes, after 5 minutes start using your spatuala to cut the chicken pieces in half... after 10 minutes and all the chicken being about the same size take a lime and squeeze it over the whole pan...stir...immmediatly add a good handful of Mozzarella (key gotta use mozzi) and a little handfull of cheddar to the top ( dont stir) let cook for 30-45 more seconds and then squeeze another half a lime around the the edges of the pan (not directly on top of the cheese just along the sides around the pan) then turn off the burner. Heat your torillas (I prefer Corn or flour soft shell style for this recipe directly heated on the gas stove) and then serve.

We could continue this thread with different taco recipes or meals.
I will continue with my favorite taco salad recipe:

Ingredients:
For the salad:
    1 pound ground beef or chicken
    1 tablespoon oil (if using lean meat)
    1 packet taco seasoning
    1 head lettuce, shredded
    1 cup cherry tomatoes, halved
    1 cup corn kernels (canned or frozen, thawed)
    1 cup black beans (canned, rinsed and drained)
    1/2 cup diced red onion
    1/2 cup diced bell peppers (any color)
    1/2 cup shredded cheddar cheese
    1/2 cup crushed tortilla chips
    Optional toppings: sliced avocado, sliced black olives, diced jalapenos

For the dressing:

   1/4 cup sour cream
    2 tablespoons mayonnaise
    1 tablespoon lime juice
    1 tablespoon chopped fresh cilantro
    Salt and pepper to taste

Instructions:
In a large skillet, heat the oil over medium heat. Add the ground beef or chicken and cook until browned and cooked through. If using ground beef, drain any excess grease. Add the taco seasoning and stir to coat the meat. Remove from heat and set aside to cool slightly.

    In a large salad bowl, combine the shredded lettuce, cherry tomatoes, corn, black beans, red onion, diced bell peppers, and shredded cheddar cheese.

    In a small bowl, whisk together the sour cream, mayonnaise, lime juice, chopped cilantro, salt, and pepper until well combined. This will be the dressing for your taco salad.

    Add the slightly cooled cooked meat to the salad bowl and toss everything together to combine.

    Pour the dressing over the salad and toss again to coat all the ingredients evenly.

    Sprinkle the crushed tortilla chips over the top of the salad.

    Serve the taco salad in individual bowls or plates, and if desired, garnish with sliced avocado, sliced black olives, diced jalapenos, or any other toppings of your choice.
